Overnight Spiced Carrots

Ingredients:

5 medium carrots
4 cloves garlic, peeled and left whole
1 jalapeño chili pepper
1 tsp red or black peppercorns
1 tsp sugar
1/2 tsp salt
1 cup cold water
2/3 cup apple-cider vinegar

Directions:

Peel carrots; cut into sticks about 3 inches (7.5cm) long and 1/4 inch (6mm) thick. In medium pot, combine carrots and enough water to cover; bring to a boil and cook 3 minutes. Drain; set carrots aside to cool slightly. In a pickling jar or glass bowl, combine garlic, pepper, peppercorns, sugar and salt. Stir in cold water and vinegar, mixing until sugar dissolves. Add carrots, cover and refrigerate overnight.
