Low Fat Recipes: Ham Loaf with Cherry Sauce
Ingredients
Ham Loaf
1 lb. ground cooked ham
1/2 lb. lean ground turkey
1/3 Progresso Plain Bread Crumbs
1/2 tsp onion powder
1/4 tsp pepper
1/2 cup milk
1 egg
Cherry Sauce
1/2 cup cherry preserves
1 tbsp cider vinegar
1/8 tsp cloves
Directions:
Spray bottom of 3 1/2 or 4 quart slow cooker. In large bowl, combine all ham loaf ingredients, mix well. Shape into 6 1/2x4 inch oval loaf.
Cut 20 x 12 inch strip of foil; cut in half lengthwise. Fold each strip lengthwise in half twice, forming two 20x1 1/2 inche strips. Lift ends of strips to place loaf on center of strips. Lift ends of strips to transfer loaf to sprayed slow cooker; fold ends of foil over top edge of slow cooker.
Cover; cook on low setting for 10 to 11 hours or until meat thermometer inserted into ham loaf registers at least 165 degrees F.
Just before serving, in small saucepan, combine all sauce ingredients; mix well. Cook over medium heat for 1 to 2 minutes or until thoroughly heated,stirring occassionally.
To remove ham loaf from slow cooker, lift with foil strips; place on serving platter. Serve loaf with sauce.
Makes 6 servings.
Ingredient Info: Either black cherry or red cherry preserves can be used for the cherry sauce.
