Lentil Chili
Ingredients
3/4 cup dried brown lentils
2 cups, chicken, beef or vegetable broth
1 can unsalted tomatoes crushed(I used salted and it was good)
1 medium green bell pepper
1 medium yellow onion
1 teaspoon crushed fresh garlic
2 T. chili powder
1/2 teaspoon ground cumin
1/4 teaspoon allspice
1 can(1 pound) unsalted tomato sauce
2 cups fresh or frozen(thawed) whole kernel corn
Directions
Mix everything together but the sauce and corn in a 2 1/2 quart pot and bring to a boil over high heat. Reduce to low, cover and simmer stirring ocassionally, for 25 to thirty minutes, or until lentils are tender. Add tomato sauce and corn to lentil mixtue. Stir to mix, cover and simmer for 10-15 additional minutes. Serve hot.
Makes 8 cups, 140 calories, 0.8 grams of fat.
