Low Fat Recipes: Italian Spinach Pie
Ingredients
1 container of (16oz) Breakstone 2% Cottage Cheese
1 Package of (10 Oz) frozen chopped spinach
thawed and drained well
1 cup shredded low moisture part-skim mozzarella cheese
4 eggs beaten
1 jar roasted red peppers well drained rinsed chopped
1/3 cup Parmesan Cheese finely grated
1 tsp Oregano
Directions
Mix all ingredients together pour into greased pie plate I used a casserole dish bake at 350 for 40 or so minutes until firm in center
Makes 8 servings
150 calories
8g fat
1g fiber 3 points for 1/8 of pie
