Orange Apricot Sauce

Ingredients:


3/4 cup orange marmalade
1 1/2 cup orange juice
1 1/2 cup red wine
1 Tbsp ground ginger
1 tsp salt
2 Tbsp honey
2 tsp potato starch, dissolved in 2 tsp. of cold water
7 oz dried apricots

Directions:


In a medium saucepan over MEDIUM heat, heat marmalade until melted.

Whisk in orange juice, red wine, ginger, salt, and honey.

Reduce to about 3 cups (10 min) and remove from heat.

Add the potato starch mixture to sauce.

Bring to a boil whisking constantly.

Add dried apricots and simmer until apricots are softened.
